This week, Chile celebrates the 202nd anniversary of its independence from Spain. The entire country is taking at least five days off to celebrate, with asados (barbecues), the cueca (the national dance, involving flowery dresses, ponchos, and handkerchiefs), and terremotos (cocktails made of white wine, pineapple ice cream, and liquor). I’ll be celebrating in the countryside and catching up on some much-needed rest.
